Sparkling Wine
Traditional-method sparkling wine gains bubbles through a second fermentation in bottle. Cava is Spain’s best-known protected sparkling name, while other regions and producer organizations also make distinctive bottle-fermented wines.
Biological Aging
Fino and Manzanilla mature under a layer of flor yeast, developing dry, savory aromas that can suggest bread dough, almond and sea air.
Oxidative Aging
Oloroso and related styles mature with oxygen, producing deeper color, fuller texture and nutty, spicy complexity.
Sweet and Fortified Traditions
Málaga, Jerez and other southern regions include historic sweet-wine traditions. Pedro Ximénez and Moscatel are especially important, though methods and sweetness levels vary.
